Did you know that the word eclair comes from the French word for “flash of lightning” because they are eaten so quickly? Join Bread Line chefs Marisa Pena and Liann Peryea to learn the secrets of making eclairs – a classic and delightful French pastry. In this class you will learn to make “pate a choux” dough, pastry cream filling, and chocolate glaze.

For more than 30 years, Bread Line has helped to feed the hungry and affirm lives in the Fairbanks community. From their humble beginnings in 1984, Bread Line has grown into four programs:

Stone Soup Cafe – A cafe where people eat meals as a community
Stone’s Throw – A food service job training program
Stone Soup Garden – A community garden to improve food security
Kids Cafe – A program involving children and families in addressing poverty

Stone’s Throw culinary training empowers people overcoming challenges to change their lives through job readiness training & skills development opportunities.

Supplies: For this class you will need to have the following supplies at home:

  • 3 – 4 metal or glass mixing bowls (at least one heat-safe)
  • rubber spatula
  • wire whisk
  • electric stand or hand held mixer (if not available, bowl and whisk will be fine)
  • measuring cups and spoons
  • small pot
  • sauce pan
  • pastry bag and pastry tip (if not available, ziplock bag)
  • cooling rack
  • sheet pan
  • parchment paper (optional)
